Sweet Cornbread Muffins

- 1 1/2 cups Sweet Corn Spoonbread mix
- 1 1/3 cup water
- 1/4 cup butter (1/2 stick)
- Pre-heat oven to 400°F. Grease or spray a 12-cup muffin pan. Measure dry mix and place in a medium mixing bowl. Add water and butter to a medium sauce pan and bring to a boil. Pour hot mixture into bowl with dry mix. Stir and let stand for 10 minutes.
- Mix batter once more and add to greased muffin pan. Fill muffin cups about 2/3 full. Bake for 13-15 minutes or until the muffins begin to brown on top.
