Apricot Glazed Pork Tenderloin

Apricot Glazed Pork Tenderloin is sweet, savory, and absolutely irresistible. Seasoned with our own Smokehouse Bacon seasoning and seared pork tenderloin is juicy perfection and finished with a tangy apricot glaze. This pork tenderloin recipe is easy enough for a weeknight meal but elegant enough for a holiday menu.

Ingredients
  • 2each- 1 ½ lbs pork tenderloin
  • 6 tablespoons brown sugar
  • 2 tablespoon Smokehouse Bacon Seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 8-12 slices bacon
  • 2 tablespoon vegetable oil
  • ½ cup apricot jam
  • 4 tablespoons whole grain Dijon mustard
Instructions
  1. Preheat oven to 350º. Pat tenderloin dry with paper towels. In a small bowl, combine brown sugar, Smokehouse Bacon Seasoning, paprika and pepper. Rub it over entire pork tenderloins. Wrap the pork with the bacon slices, securing each with a toothpick. In a large cast iron or oven proof skillet, heat oil over medium-high heat until it sizzles. Add the tenderloin and sear for about 5 minutes. In a small bowl combine the jam and mustard and brush it on all sides of the tenderloin. Place in the oven and cook until a meat thermometer reads 140º to 150º, about 10-15 minutes, depending on the thickness. Remove from the oven and loosely tent with foil. Rest for 10 minutes to allow it to finish cooking. Remove toothpicks and slice. 3-4 Servings
