A good basic sausage, but a bit salty when mixed as directed. I recommend backing off a bit on the recommended mix. This doesn't seem to affect flavor much, as there are plenty of herbs, etc. Quite a lot of settling occurs with this particular mix. One must take special care to get an even distribution of ingredients when making smaller batches. Some of the herbal ingredients are particularly susceptible to a static charge, too, sticking to stainless mixing bowls, scoops, and anything plastic. I have also tried smoking the finished product with applewood, and the results were outstanding.
