This recipe for crock pot steak and potato soup is pure comfort food - real stick to your ribs, hearty meal. Features Beef Flavored Barley Soup Starter.

Ingredients
  • 1 1/2 lbs beef stew meat or sirloin, cut into thin cubes
  • 3 Tbsp cooking oil
  • 2 Tbsp butter
  • 1 sweet yellow onion, diced
  • 4 small russet potatoes, diced
  • 2 Tbsp flour
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 cups water
  • 2 cups Beef Barley Soup Starter mix (SKU 428029)
  • 1 cup heavy cream
  • 1 cup white cheddar cheese, shredded
Instructions
  1. In a large skillet set over medium high heat, add the cooking oil and butter. Add beef, onion and potatoes and brown on all sides. You do not need to cook through.
  2. Add flour and seasonings to coat meat and vegetables. Cook for 1 minute.
  3. In a large crock pot, add water and Beef Barley Soup Starter. Mix thoroughly to dissolve. Add in browned beef mixture and mix to incorporate.
  4. Turn on crock pot to high heat and cook, covered, for 4 hours or until beef and potatoes are tender.
  5. Lastly, stir in heavy cream and shredded cheese and mix. Cook an additional 30 to 40 minutes. Serve with crusty bread or biscuits. Simple & Delicious
